Steamed Sourdough Einkorn Apple Cinnamon Muffins

These muffins are moist and soft, yet firm enough not to fall apart on the go. They are lightly sweeten, so the natural apple flavors shine through, rather than the sweetness itself. It is a sweet treat that will satisfy your sweet tooth, but not too sweet that it would make you eat three pieces!

They are dairy-free and sourdough for digestion, made with einkorn for low inflammation, and made of fresh ingredients and steamed for flavors and nutrient density preservation!

Chocolate & Olive Oil Almond Cake

Part chocolate cake, part fudge, part brownie… This dairy free, gluten free chocolate cake is intense in chocolate, delicate, dense. It is delicious on the day it is made, even better the next day. Pairs fabulously with any fruit, especially pears and all type of berries. Makes for an amazing chocolate cake without any need for frosting!

Orange & Almond Steamed Bites

These almond orange cupcakes are made with only six ingredients, and they are gluten free ! Oranges, orange blossom water for perfume, almond meal ( NOT flour), eggs, extra virgin olive oil, and sugar. They smell amazing, are soft to the touch, and will melt in your mouth. If you are nut intolerant, you may try with cup for cup gluten free flour for sure, but it may be more dense.

Chocolate Hazelnuts Einkorn Steamed Bites !

My kids love these little chocolate hazelnut bites, even the ones that are not at all into chocolate! I usually make them with them and freeze, so we can grab a few to the park. They are sweet enough not to need frosting, but flavorful enough to be yummy on their own. They have nuts so they are reasonably filling, although a version adding some rolled oats may be more filling if you want to rely on that to fill growing kid’s tummies, especially if you plan only on cupcakes for snack. What is so special about them ? They are made with and baked in a steam cooker !
