L&rsquo;un des plats pr\u00e9f\u00e9r\u00e9s de notre famille est le houmous !  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Est-ce que je fais AUSSI mon propre houmous ? OUI ! Et non, je ne veux pas vous faire culpabiliser d&rsquo;acheter votre propre houmous &#8211; c&rsquo;est tellement bon march\u00e9 et pratique, n&rsquo;est-ce pas ? Mais voici ce qu&rsquo;il en est 1) C&rsquo;est SUPER FACILE \u00e0 faire, 2) Le houmous maison est beaucoup plus facile \u00e0 dig\u00e9rer, 3) il se pr\u00eate tr\u00e8s bien \u00e0 l&rsquo;alimentation des b\u00e9b\u00e9s&#8230;      <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mon houmous est tr\u00e8s cun peu plus \u00e9pais (mais il est facile de le fluidifier sur place avec un peu d&rsquo;eau) et plus savoureux que la plupart des autres, ET il contient de merveilleuses saveurs. Quel est donc mon secret ? Pourquoi ? Parce que l&rsquo;industrie cherche toujours \u00e0 raccourcir les temps de pr\u00e9paration par souci d&rsquo;efficacit\u00e9, ce qui fait qu&rsquo;elle ne les pr\u00e9pare pas bien. Achetez-les s\u00e8ches et vous obtiendrez le r\u00e9sultat escompt\u00e9.    <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sur le plan budg\u00e9taire, vous serez satisfait. Une bo\u00eete de l\u00e9gumineuses bio vous co\u00fbtera environ un dollar chez Aldi. Pas cher ? NON ! Si vous les achetez comme moi en vrac chez <a href=\"\" target=\"\" rel=\"\">Azure standard <\/a>, cela vous co\u00fbtera 2 $\/ livre ! Une tasse de pois chiches fait plus que doubler les volumes : cela vous permet d&rsquo;\u00e9conomiser de l&rsquo;argent \u00e0 long terme. Je pense que la diff\u00e9rence est tr\u00e8s comparable en Europe. Cet acide emp\u00eache votre organisme d&rsquo;absorber certains nutriments dont vous avez besoin, comme le zinc, important pour votre syst\u00e8me immunitaire ! C&rsquo;est pourquoi je ne recommande pas de se fier aveugl\u00e9ment aux informations nutritionnelles figurant \u00e0 la fin d&rsquo;une recette : beaucoup de choses d\u00e9pendent de la mani\u00e8re dont les aliments sont cultiv\u00e9s et pr\u00e9par\u00e9s.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il ne reste plus qu&rsquo;\u00e0 faire cuire les haricots correctement. Je dirais m\u00eame plus : avec un bon cut vapeur, c&rsquo;est sans doute la MEILLEURE m\u00e9thode de cuisson, la m\u00e9thode de cuisson \u00a0\u00bb id\u00e9ale \u00a0\u00bb que ma co-auteur Christine Bouguet-Joyeux et moi-m\u00eame d\u00e9fendons dans notre nouveau livre sorti en France <a href=\"\">\u00a0\u00bb La Cuisson id\u00e9ale pour votre sant\u00e9 \u00ab\u00a0<\/a>. Malheureusement, notre livre n&rsquo;est pas encore traduit, mais j&rsquo;esp\u00e8re qu&rsquo;il le sera un jour ! Elle tue donc de nombreuses vitamines et rend plus difficile l&rsquo;assimilation par l&rsquo;organisme de vos oligo-\u00e9l\u00e9ments. C&rsquo;est la raison pour laquelle je recommande personnellement de les cuire \u00e0 la vapeur. Si vous faites trop cuire les fibres, leur indice glyc\u00e9mique augmente et elles commencent \u00e0 fermenter dans votre intestin&#8230; c&rsquo;est pourquoi nous avons des gaz. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A l&rsquo;inverse, dans le Vitaliseur, les pois chiches tremp\u00e9s ou germ\u00e9s (et les lentilles tremp\u00e9es) ne n\u00e9cessitent que 5 \u00e0 6 minutes de cuisson ! Combien de temps avez-vous gagn\u00e9 en faisant tremper les haricots secs \u00e0 l&rsquo;avance ? BEAUCOUP ! Plus nos aliments sont denses en nutriments, plus il sera facile pour notre corps de r\u00e9sister aux aliments ultra app\u00e9tissants, et plus nous pourrons esp\u00e9rer que la consommation de certains de ces aliments sera indulgente pour nous !  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bien s\u00fbr, si votre corps a du mal \u00e0 dig\u00e9rer les fibres crues ou les haricots en g\u00e9n\u00e9ral, je vous recommande d&rsquo;y aller tr\u00e8s doucement au d\u00e9but et de voir comment vous les dig\u00e9rez ( une cuill\u00e8re par repas de plus \u00e0 la fois, apr\u00e8s avoir tr\u00e8s bien m\u00e2ch\u00e9). Le calcium v\u00e9g\u00e9tal est \u00e9galement beaucoup mieux absorb\u00e9 que le calcium du lait de vache !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le fait est que le calcium contenu dans le lait de vache est <a href=\"http:\/\/the%20absorption%20of%20calcium%20from%20dairy%20products%20and%20fortified%20foods%20is%20about%2030%25%20%5B1%5D.\/\">absorb\u00e9 \u00e0 hauteur de 30 %<\/a> (o\u00f9 va le reste ??). Les produits contiennent \u00e9galement beaucoup de calcium hautement absorbable :<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC8746734\/\" target=\"_blank\" rel=\"noreferrer noopener\"> 50 % pour les l\u00e9gumes \u00e0 feuilles vertes et<\/a> 20 \u00e0 30 % pour les haricots.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remarque : le s\u00e9same non d\u00e9cortiqu\u00e9 contient plus de calcium que le s\u00e9same d\u00e9cortiqu\u00e9. Je n&rsquo;ai aucun probl\u00e8me \u00e0 les dig\u00e9rer, non seulement parce que j&rsquo;en mange beaucoup, mais aussi parce que la cuisson \u00e0 la vapeur les rend plus faciles \u00e0 dig\u00e9rer.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans cette recette, l&rsquo;oignon donne un c\u00f4t\u00e9 un peu plus sal\u00e9 &#8211; plut\u00f4t que sucr\u00e9 &#8211; qui se marie tr\u00e8s bien avec l&rsquo;ail et le s\u00e9same. C&rsquo;est ma touche personnelle, et je l&rsquo;aime trop pour l&rsquo;abandonner ! Cuire 5- 6 minutes. Testez ! Cela doit &ecirc;tre assez mou pour m&acirc;cher sans probl&egrave;me, mais croquant pour ne pas avoir d&eacute;truit les fibres.<\/li><li data-step-index=\"3\" id=\"mv_create_67_4\">Pendant la cuiisson des pois chiches, coupez l'oignon en tranches fines. Apr&egrave;s la cuisson des pois chiches, cuire 5 minutes sur le tamis.<\/li><li data-step-index=\"4\" id=\"mv_create_67_5\">TRansf&eacute;rez pois chiches puis oignon dans le robot.. Ajoutez le tahin, l'ail, le sel, 2 tasses d'eau ( 1 cup) et h&acirc;chez pendant quelques minutes pour que cela devienne le plus cr&eacute;meux possible. Apr&egrave;s quelques minutes, ajouter les deux tasses d'eau (1 cup) de plus et h&acirc;cher aussi finement que possible (2-3 minutes). Prenez soin de racler les c&ocirc;t&eacute;s de temps &agrave; autre..<\/li><li data-step-index=\"5\" id=\"mv_create_67_6\">Pressez le citron et ajoutez le au m&eacute;lange. Go&ucirc;tez et ajoutez le reste du citron si besoin.<\/li><li data-step-index=\"6\" id=\"mv_create_67_7\">Transf&eacute;rez dans un bol, couvrez d'huile d'olive et un peu de  s&eacute;same. Trempez vos l&eacute;gumes! <\/li><li data-step-index=\"7\" id=\"mv_create_67_8\">Ce houmous peut rester au frigo une semaine, en couvrant toujours d'huile. Il peu &eacute;paissir le premier jour: si c'est trop &eacute;pais ajoutez une tasse d'eau (1\/2 cup).
