Mais en France, un pain complet au levain est facile d&rsquo;acc\u00e8s. Pas aux Etats-Unis C&rsquo;est pourquoi, puisque je suis de plus en plus sensible \u00e0 la qualit\u00e9 du grain, j&rsquo;ai abandonn\u00e9 la farine blanche et l&rsquo;ai remplac\u00e9e par de la farine d&rsquo;engrain pour faire mon propre pain au levain. Je n&rsquo;aurais probablement pas appr\u00e9ci\u00e9 autant le pain au levain si je n&rsquo;avais pas \u00e9t\u00e9 oblig\u00e9e de le faire moi-m\u00eame! Cependant, je suis aussi devenue curieuse du kamut \u00e0 cause de son go\u00fbt noisette et de sa belle couleur jaune profond.<\/p>\n\n<p class=\"wp-block-paragraph\">Pour faire ce pain, je me suis appuy\u00e9e sur la recette de boule d&rsquo;engrain au levain que j&rsquo;utilise depuis des ann\u00e9es. Apr\u00e8s quelques ajustements, j&rsquo;ai r\u00e9ussi \u00e0 le faire fonctionner avec le Kamut. Bonus: Le Kamut a besoin d&rsquo;une fermentation plus courte pour prendre forme plus facilement. Vous aimerez ce pain d&rsquo;un jaune oranger profond, et sa saveur noisette. Si vous voulez faire l&rsquo;exp\u00e9rience de l&rsquo;intensit\u00e9 du go\u00fbt du kamut complet, essayez ce pain au levain! Ce pain est moelleux, satisfera votre estomac autant que vos papilles. Il se marie bien avec une confiture, une tartinade maison fra\u00eeche, avec des tranches fines d&rsquo;avocat et du s\u00e9same grill\u00e9, ou avec vos oeufs au plat. Certains pensent qu&rsquo;il s&rsquo;agit de la c\u00e9r\u00e9ale cultiv\u00e9e par les \u00c9gyptiens dans l&rsquo;Antiquit\u00e9 sur les rives du Nil, \u00e0 l&rsquo;\u00e9poque o\u00f9 le Nil connaissait encore des mar\u00e9es hautes et basses. Le nom Kamut est en fait l&rsquo;ancien mot \u00e9gyptien pour le bl\u00e9. Pourquoi ce nom ? Les grains de bl\u00e9 auraient \u00e9t\u00e9 r\u00e9cup\u00e9r\u00e9s dans les ann\u00e9es 1950 dans la tombe d&rsquo;un ancien Pharaon et remis \u00e0 un voyageur am\u00e9ricain qui les a envoy\u00e9s \u00e0 son p\u00e8re, cultivateur dans le Montana. On pense qu&rsquo;il est originaire du Croissant fertile de l&rsquo;Irak, de l&rsquo;Iran et de l&rsquo;Asie centrale. Il pourrait \u00e9galement s&rsquo;agir d&rsquo;un croisement entre le triticum polonicum et le bl\u00e9 dur. <\/p>\n\n<p class=\"wp-block-paragraph\">Lorsqu&rsquo;il a commenc\u00e9 \u00e0 \u00eatre cultiv\u00e9 dans le Montana dans les ann\u00e9es 1980 par des agriculteurs p\u00e8re et fils, certaines personnes se sont rendu compte que si leur syst\u00e8me digestif ne se portait pas bien avec le bl\u00e9 ordinaire moderne, elles n&rsquo;auraient pas le m\u00eame probl\u00e8me avec le Kamut. La marque est une id\u00e9e d&rsquo;un cultivateur du Montana, Bob Quinn, destin\u00e9e \u00e0 pr\u00e9server les c\u00e9r\u00e9ales d&rsquo;\u00e9ventuels croisements et hybridations. La culture du Kamut est soumise \u00e0 des r\u00e8gles tr\u00e8s strictes. Utilisez directement le d\u00e9marreur.  <\/p>\n\n<p class=\"wp-block-paragraph\">&#8211; <strong>Retournez la p\u00e2te <\/strong>4 fois \u00e0 20 minutes d&rsquo;intervalle (soit pendant un peu plus d&rsquo;une heure) ;<\/p>\n\n<p class=\"wp-block-paragraph\">&#8211; <strong>Faites fermenter la p\u00e2te \u00e0 pain <\/strong>\u00e0 temp\u00e9rature ambiante pendant 4 \u00e0 5 heures, ou commencez \u00e0 temp\u00e9rature ambiante pendant une heure et passez la nuit pendant 7 \u00e0 8 heures. Je ne recommande pas de r\u00e9frig\u00e9rer la p\u00e2te de kamut par temps froid. Jusqu&rsquo;\u00e0 pr\u00e9sent, j&rsquo;ai d\u00fb le surveiller plus souvent apr\u00e8s l&rsquo;avoir r\u00e9frig\u00e9r\u00e9, car le Kamut ne commen\u00e7ait pas \u00e0 lever pendant plusieurs heures apr\u00e8s la sortie du r\u00e9frig\u00e9rateur. Je trouve qu&rsquo;il est plus difficile de surveiller la lev\u00e9e du pain apr\u00e8s l&rsquo;avoir r\u00e9frig\u00e9r\u00e9, car je suis tr\u00e8s occup\u00e9e ou j&rsquo;ai besoin de sortir pour une activit\u00e9 d&rsquo;enfants. Couvrez<\/p>\n\n<p class=\"wp-block-paragraph\" id=\"isPasted\">&#8211; <strong>Faites cuire le pain<\/strong> dans une cocotte dans un four tr\u00e8s chaud : pr\u00e9chauffez \u00e0 500\u00b0F (260\u00b0C) et faites cuire \u00e0 450F pendant 40 minutes. La cocotte permet de saisir le pain et de le cuire \u00e0 temp\u00e9rature constante ;<\/p>\n\n<p class=\"wp-block-paragraph\">&#8211; Faites cuire jusqu&rsquo;\u00e0 ce que le pain soit dor\u00e9s,<\/p>\n\n<p class=\"wp-block-paragraph\">&#8211; Astuce : Apr\u00e8s la cuisson et le refroidissement, enveloppez-le dans votre toile de lin \u00e0 l&rsquo;endroit o\u00f9 vous l&rsquo;avez \u00e9lev\u00e9 et il r\u00e9absorbera les bons ferments ! Add 45 g of starter into the bowl. Tare and add half the water  and mix until it dissolves. Add into the flour, then add the leftover water.<\/li><li data-step-index=\"2\" id=\"mv_create_64_3\">On your food scale, place a mixing bowl. Add in 720g Kamut \/ Khorasan flour and 1.5 TSP unbleached <a href=\"https:\/\/amzn.to\/40rimQv\" target=\"_blank\" rel=\"nofollow\">sea salt <\/a>or Himalayan salt.<\/li><li data-step-index=\"3\" id=\"mv_create_64_4\">Mix together starter salt and flour in the large mixing bowl until water is fully absorbed. You may need to move the dough to a clean work surface to mix with your clean hands to get there. Put the dough back into the baking bowl and cover for 20 minutes.<\/li><li data-step-index=\"4\" id=\"mv_create_64_5\"><strong>After 20 minutes, Turn the dough:<\/strong> Spread the dough a bit on the work surface. Add about 1 tbsp flour, stretch then fold the dough halfway to the other side. Then from the upper side to the lower side fold the dough half way to the other side. Turn the dough one more time 20 minutes later, and twice again at 20 minutes intervals. Spread then add a bit of flour, and turn the dough again. Return the dough to the bowl.<\/li><li data-step-index=\"5\" id=\"mv_create_64_6\"><strong>Raising: <\/strong>Cover the bowl with a plastic wrap or a beewax saran wrap so no airs goes through. <strong>Let the dough ferment<\/strong> for 3 hours on the counter, or 8 hours after 1 hour on the counter ( which I don't recommend by colder weather).<\/li><li data-step-index=\"6\" id=\"mv_create_64_7\"><strong>Proofing: <\/strong>After fermentation, take the dough out of the bowl without folding it too much to not break the fermentation bubbles. Lay on a  floured work surface, then fold over the sides of the dough toward the center to shape it. Flour the dough, flour a proofing basket. Turn the dough around on the seam side and lay it delicately seam side down into the proofing basket. Cover with a <a href=\"https:\/\/amzn.to\/4hqsf6W\" target=\"_blank\" rel=\"nofollow\">linen couche<\/a> ( a thick, special linen baking cloth)<\/li><li data-step-index=\"7\" id=\"mv_create_64_8\">While proofing (40 minutes before you want to cook it) turn on the oven and heat at 500&deg;F (260&deg;C), <strong>heat up the dutch oven<\/strong> for 30 minutes.<\/li><li data-step-index=\"8\" id=\"mv_create_64_9\"><strong>Cook the bread: <\/strong>Add the dough into the dutch oven, slash the surface of the dough lightly a few times and cover. Cook for 40 minutes.<\/li><li data-step-index=\"9\" id=\"mv_create_64_10\"><strong>Let the bread cool down for 30 minutes.<\/strong> The bread should have a hard crust, but retained its bright yellow color! Enjoy warm or cold. Dip FRESH into olive oil and salt, olive oil and grated parmesan, or diluted fresh pesto ! Baking kills the good bacteria in your bread. However, the baking cloth in which the bacteria rests preserves this bacteria. After cooking and cooling your bread, wrap it into your linen couche again and seed its good bacteria into the bread anew!
